There is something ultimately earthy about potatoes. When they are ready to be plucked from the soil, they are ready to be washed off and made into many different dishes. Potatoes go well with almost anything and are a crowd pleaser from little toddlers all the way to the seasoned.

Simply adding olive oil, salt, pepper and fresh herbs will make your side dish easy and not to time consuming.

Yukon baby potatoes

Herbed Yukon Golds

  • 1.5 pounds yukon potatoes, washed and halved
  • 1/4 cup olive oil
  • Assortment of fresh herds, parsley, dill, rosemary (you choose whatever you like)
  • salt & pepper to taste (I love mine nice a peppery)

Preheat your grill.

Cut the potatoes and toss into a bowl. Add the olive oil, herbs and salt & pepper. Mix until completely combined. Get some foil ready and place into a couple different packets. Wrap them up securely and head out to the grill.

Cook on medium heat, flipping the taters about every 5-7 minutes to keep from burning. Let them cook for 30-35 minutes depending on the crunchiness level you want. The best method to see if they are to your liking is by being the professional taste tester.

Cheers!
