Is everyone feeling a little full from this weekend’s festivities? Here is a healthy and simple side that will surely make you feel a little bit better about overindulging. Sweet potato fries are a great feast to a healthy hand-made turkey burger. NOM! NOM!

Sweet Potato Fries (Baked)

  • Olive oil for tossing
  • 2-3 sweet potatoes, peeled and sliced in 1/4″ thick
  • salt & pepper
  • 1 teaspoon truffle salt (optional, but HIGHLY recommended)

Preheat oven to 400 degrees.

Line a sheet tray with parchment paper. In a large bowl toss the taters with enough olive oil to coat. Add some salt and pepper. Spread potatoes out into a single layer and put into the oven. Bake until the fries are looking golden brown, turning occasionally, about 20 minutes. Pull from the oven and sprinkle the truffle salt lightly onto the fries and let cool for 5 minutes or so.

This specialty salt from Italy will soon become one of your most frequently used ingredients. Its richly nuanced flavor enhances everything from grilled meats and roasted potatoes to scrambled eggs and buttered popcorn. It is pricy but totally worth every penny. I bought mine from William’s Sonoma last week and has been used 3 times already. It is worth the splurge and will take your dishes into a different flavor category…I promise!
