Bow Tie Pasta + Tomatoes + Fresh Greens

Today is the first day of Spring and my gosh it will actually feel like it!

Diving into Spring for me is all about readjusting, purging, cleansing and detoxing. I’m not necessarily saying a full on juice cleanse or detox, but a simplified way of eating. Preparing meals that are of few ingredients and really appreciating the simplicity of those ingredients.

Let’s start out with a tomato and noodle pasta bowl.

Bow Tie Pasta + Tomatoes + Fresh Greens

1 lb bow tie pasta (or any pasta)

1 container tomatoes, halved

1 cup mixed greens, arugula, baby spinach, basil

1/4 cup pitted kalamata olives

1/2 cup olive oil

Salt + pepper to taste

Cook pasta according to package. Drain and set aside. While pasta is cooking, wash up and halve the tomatoes and add to a large glass bowl.

Once the pasta is cooled, add to the glass bowl. Add in greens, olives, olive oil and salt + pepper. Toss until evenly coated.

Eat chilled or warmed up. Whichever way you prefer.
