Happy Holidays to everyone! May you have a wonderful Christmas filled with joy, laughter and delicious food.
This week will be a week of feasting, toasting and lounging with family and friends. When all the amazing madness settles you will still need to eat! However you may want some lighter fare that will taste delicious without making you feel super full. If you have parties this weekend this would be a great addition to a tasty pork dish or roasted chicken.

Broccoli & Apple Salad
- 2 tablespoons sugar
- 6 tablespoons apple cider vinegar
- 2 tablespoons dijon mustard
- 1 tablespoon canola oil
- 1/2 teaspoon black pepper
- 1 dash of salt
- 1 head broccoli, coarsely chopped
- 1/2 pound apple, chopped
- 1/4 cup onion, finely chopped
- 1/4 cup goat cheese, crumbled
Combine sugar, apple cider vinegar, dijon mustard, oil, salt and pepper. Whisk until blended together. Add broccoli, apples, sweet onion and goat cheese. Toss together until dressing is evenly distributed.
