Ohhhh it was a sure taste of spring & summer last week hitting into the 70s. Hard to believe a week ago we were covered in a massive blanket of snow. So that is it, I have decided that each week we will jus groove with the lovely weather of Michigan..hence the caprese salad.
This salad is so breezy and delightful — you just can’t go wrong. It is a great snack or a wonderful way to start a meal…did I mention it was super easy too?!
Caprese Salad
~ 2 to 4 tomatoes, sliced 1/2 inch thick
~ 2 balls mozzarella
~ 4-6 fresh basil leaves
~ 1 tablespoon balsamic vinegar
~ salt & pepper to taste
Arrange the tomatoes, cheese and basil on the plate the way you like it. Drizzle with balsamic vinegar and dash with salt & pepper.
