I feel the need to bust out a smoothie series…how do we all feel about that? The warm weekends are upon us, beautiful foods will keep filling our bins and our mornings should really start with a plethora of healthy, nutritious vitamins.

Smoothies and juices can all be made ahead of time and just chill in our fridge until you are ready for a refill. It’s ok if you don’t have a fancy juicer or smoothie maker…all you need is a decent blender.

So let’s start with carrots!

Carrot Cake Smoothie

~ 2-4 carrots, washed and tops removed

~ 1 banana

~ 1/2 cup coconut almond milk

~ 1/4 cup dates

~ 1 teaspoon pumpkin pie spice (adjust if you want it stronger)

In a blender place all your ingredients. Blend until smooth and creamy. You may have to add more almond milk to thin it out a bit. Adjust accordingly.
