The week of Christmas is here! No matter what you and your family celebrate, you will want to whip up this hummus for your party appetizer or even to just munch on throughout the week while you try to maintain sanity. 😉

This is a perfect snack for lunch or a great share plate.

Sometimes we over think what we are going to bring to an event…this right here is our gift to you…a simple and healthy decision.

Vegan Cauliflower Hummus

~ 1 medium head cauliflower, chopped into small florets

~ cooking spray

~ 1 clove garlic

~ 1/3 cup tahini

~ 2 tablespoons lemon

~ 2 tablespoons olive oil

~ salt & pepper to taste

~ pinch of paprika

~ pine nuts, lemon wedges + fresh parsley for serving

~ pita + fresh veggies for serving

 

Preheat oven to 400 degrees. Spray with oil or cooking spray.

Place cauliflower florets on baking sheet. Spray with additional oil or cooking spray. Roast for 40 minutes, stirring halfway through cooking time. Remove from oven and cool.

Combine cauliflower, garlic, tahini, lemon juice, olive oil, salt and pepper in food processor. Process until smooth. Add water one tablespoon at a time for a thinner consistency, if desired.

Drizzle with olive oil and sprinkle with parsley + pine nuts to kick it up a notch. Drop that pinch of paprika. Serve with lemon wedges, pita bread, and fresh veggies.
