Get your crunch on with this quick cauliflower salad. An easy to assemble and take with you to work lunch type dish. It is packed with a variety of vegetables and flavor.

Cauliflower salad with cucumbers and colored pepper

Cauliflower Salad with Cucumbers

~ 3 tablespoons red wine vinegar

~ 1 teaspoon fresh lemon juice

~ 1/3 cup olive oil

~ 1 tablespoon fresh dill

~ 1 head cauliflower, cut into florets

~ 1 cucumber, sliced thin

~ 1 cup grape tomatoes, halved

~ 1/2 cup organic frozen corn, thawed

~ 1/2 cup assorted greens (arugula, spinach, leaf lettuce, etc)

In a small bowl whisk together vinegar, lemon juice, olive oil and dill. In a large bowl add all of your chopped vegetables, including the corn and greens.

Toss with the dressing and sprinkle with salt & pepper to taste.

Let marinate for a couple hours or eat immediately.

(I told you that was easy – hehe)
