Let’s get down to the basics this week and use some of our local goodies for what we call the every so lovely TACO. If some of you are unfamiliar with the taco, it starts with a shell of sorts and is then stuffed with anything and everything you can find in your fridge and pantry. We can all be honest and say there isn’t much you can’t put in a taco that wouldn’t taste good.

Ok, let’s get started and create a classic ground beef taco this week…please substitute wherever you see fit. If you prefer a vegetarian or vegan taco, use walnuts & sun dried tomatoes for your taco meat. That will really knock your socks off!

Mexican food - delicious tacos with ground beef

Classic All Beef Taco

~ 1 tablespoon coconut oil

~ 1 onion, minced

~ 2 cloves garlic, minced

~ 2 tablespoons chili powder

~ 1 tablespoon cumin

~ 1/2 teaspoon oregano

~ 1/4 teaspoon cayenne

~ 1/2 teaspoon kosher salt

~ 1 pound ground beef

~ 1/2 cup canned tomato sauce

~ 1/2 cup broth (chicken, veggie or beef)

~ 2 teaspoons cider vinegar

~ 1 teaspoon honey

~ desired toppings: lettuce, tomato, onion, cheese, yogurt, lime, corn

~ pack of tortilla shells: hard or soft

Heat the oil in large skillet. Cook the onion for about 5 minutes or until onions are softened. Add in the garlic, spices and salt. You should start to smell delicious smells after 30 seconds to 1 minute.

Stir in ground beef and brown for about 5 minutes, breaking up the beef with a spoon.

Pour in the tomato sauce, broth, cider and honey.

Simmer for 10 minutes. While the meat is simmer, grab your onion, tomato, lettuce, cheese and yogurt and set on the dinner table.

Add in salt if needed.
