This time of year brings fresh veggie platters for days. It is a crowd pleaser for BBQs and your lunch box. You have all these beautiful vegetables to dip and then you realize you have a highly processed dip sitting in your fridge with a million ingredients to it…when it should be just a simple handful.
There are many twists and variations to dips, adjust to your personal liking and you will not be disappointed.
Cucumber Yogurt Dill Dip
~ 1 cup yogurt
~ 1 cup peeled & diced cucumber
~ 1 clove garlic, minced
~ 1 tablespoon fresh dill, chopped
~ 1 tablespoon fresh chives, chopped
~ 2 teaspoons lemon juice
~ dash of kosher salt & cracked pepper
Place yogurt to small bowl. Add in cucumber, garlic, dill, chives, lemon juice and s&p. Stir well and chill for 1 hour before serving.
