Tossing a bunch of freshly chopped vegetables into a bowl, adding some good oils, vinegars, herbs and seasoning sure do make for a delightful dish.

I usually pull all the vegetables out of the fridge, look at them, and nod my head to myself and say “yeah this will all work together as one!” A chilled, raw vegetable salad will bring a certain crisp element to your dinner. It will go nicely with a grilled meat or fish to bring a bright and refreshing bite to your meal. We don’t always have to cook those veggies…get crazy and go raw.

Fresh “Summer” Salad

~ 1 cucumber sliced thin and halved

~ 1 cup grape or cherry tomatoes, halved

~ 3-4 radishes, sliced thin

~ 1 red pepper, sliced

~ 1 cup greens of choice, chopped

~ 10 leaves fresh basil

~ 2 tablespoons olive oil

~ 1/2 lemon juiced

~ 1 clove garlic, minced

~ salt & pepper to taste

Wash and prepare all your vegetables. In a small bowl, combine olive oil, lemon, garlic and salt & pepper. Whisk until blended together. Drizzle over fresh vegetables and toss until coated. Taste and adjust any seasonings you wish.
