Potatoes, who doesn’t love potatoes?! It is one of the best, most American side dishes of all times. While we all love and long for french fries and potato chips…our healthiest, yet most satisfying version would be tossed in goodness and roasted to a crispy perfection.

When we do something as simple as roasted potatoes, it brings all sorts of aromas to the kitchen that make you want to open the oven and taste test a couple spuds.

This easy, sure to please the crowd recipe will have this in your staple recipe box for sure!

Garlic Herb Roasted Potatoes

~ 1 pound red potatoes

~ 1/2 lemon, juiced

~ 2 tablespoons olive oil

~ 2 cloves garlic, finely minced

~ 1 teaspoon dried rosemary

~ Salt & pepper to taste

~ 1 tablespoon fresh parsley

Preheat oven to 425 degrees. In a large bowl add chopped red potatoes, olive oil, lemon, garlic and rosemary. Toss to evenly coat. Dash with salt & pepper. Line a baking sheet with a large piece of parchment paper. Lay the potatoes out in a single layer.

Bake 30-35 minutes or until tender golden. Sprinkle fresh parsley on potatoes and serve.
