Let’s crunch on some In Harmony Farms cauliflower this week. Take the little florets to a new level with some simple seasonings and other veggies.

Grilled Cauliflower Salad with Lemon Dressing

for the salad:

~ 1 head cauliflower, chopped into small pieces

~ 3 green onions, sliced

~ 1 tablespoon olive oil

~ salt & pepper to taste

for the dressing;

~ 2 teaspoons minced shallot

~ 1 tablespoons dijon mustard

~ 3 tablespoons fresh lemon juice

~ 1/2 teaspoon lemon zest

~ 2 teaspoon honey

~ 3 tablespoon olive oil

Preheat the grill to 400 degrees. Toss the chopped cauliflower and green onions with olive oil, salt and pepper.

Line the grill with large sheet of aluminum foil. Pour the cauliflower onto the foil and grill for 20-30 minutes flipping the cauliflower around halfway through to prevent from burning. While the cauliflower is roasting prepare the dressing.

Remove the cauliflower from grill and set to cool for 5-10 minutes.

In a small bowl, whisk together the shallots, mustard, lemon juice, lemon zest and honey. While whisking, stream in the olive oil. Taste and season the dressing with salt and pepper.

Drizzle dressing over cauliflower and mix thoroughly. Season with salt and pepper. Plate and enjoy!
