Looking for a different spin on plums? Plum salsa is the way to go…chop it up and serve as a topping on grilled chicken breasts.
Grilled Chicken with Plum Salsa
CHICKEN:
2 teaspoons honey
1/2 teaspoon salt
1/2 teaspoon ground cumin
2 cloves fresh garlic, chopped
2 teaspoons olive oil
4 (4-ounce) skinless, boneless chicken breast halves
PLUM SALSA:
1 cup chopped ripe plum (about 2 plums)
2 tablespoons chopped fresh cilantro
2 tablespoons chopped red onion
2 teaspoons cider vinegar
1/4 teaspoon hot sauce
1/8 teaspoon salt
To prepare chicken, combine the first 5 ingredients. Toss chicken with honey mixture.
Preheat grill to medium heat. Add chicken; cook 8 minutes on each side or until done.
While the chicken is cooking, combine remaining ingredients in a bowl. Serve on top of the chicken.
