Get that grill fired up and those peaches prepped. If you haven’t grilled fruit before it is a wonderful thing. It brings out the flavor and intensifies the already yummy fruit.

~ fruit kebobs

~ apples, blue cheese and balsamic

~ pineapple with Nutella

~ cantaloupe with proscuitto

Grilled Peach Brushetta 

~ 1 baguette, sliced & toasted

~ 4 peaches, halved

~ 1 cup ricotta cheese

~ 1 tablespoon honey

~ 2 tablespoons pine nuts, optional

Preheat the grill to medium heat. Lay peach slices on the grill grates and cook for 5 minutes.

Flip and cook on the other side for an additional 5 minutes or until grill marks are formed and peaches are tender.

Remove from grill and allow to cool until they can be handled.

Remove the skins and slice into thin slices. Spread ricotta cheese onto toasted baguette slices and top with peaches. Drizzle with honey.

Sprinkle with pine nuts if you so desire.
