If your summer weekend meals begin with chicken, steak, hamburgers or fish…then these simple toss on the grill potatoes will be perfect for your plate…and awesome for leftovers.

Get out your herbs, olive oil and salt and pepper and call it a day!

Grilled Herb Potatoes

~ 1 pound red skin potatoes, washed & quartered

~ 2 tablespoons olive oil

~ salt & pepper to taste

~ 1 tablespoon fresh herbs (parsley, basil and dill are great)

Fire up that grill to about 400 degrees. In a mixing bowl toss potatoes, olive oil and salt and pepper. Either wrap up in a foil pack or on a grill safe pan. Grill for about 20-25 minutes flipping around the potatoes every 5 minutes to prevent burning.

Remove from the grill, add back into the bowl and toss with fresh herbs and more s&p if you so desire.
