In your bins this week you will find a great combination of citrus, greens and fruits. I am not sure about you, but I can’t get enough of the grilling season. It seems to whiz by in the blink of an eye…so I vow to utilize the grates as much as I can and you should to.

So this week I will let you in a few new ides on how to utilize some of your items coming to your door by grilling them. With 4th of July coming up ever so quickly, these will be great new party favorites for you and your friends! Trust me…a grilled lemon margarita…they will surely love.

Lemons – GRILL THEM! It will add a smoky flavor to the ever so juicy fruit they provide. Interested in making a margarita or a vodka and lemonade with a sprig of mint. Why wouldn’t you? Grill the lemons for 5 minutes or so and add to your summer cocktails.

Avocados – as if the buttery, smooth texture of an avocado isn’t enough for you…GRILL IT! Half it, take the pit out and brush it with olive oil & fresh lemon or lime. Face it skin side up and grill it for 5-10 minutes. Remove and fill it up with cheese, sour cream and fresh cilantro. Dig in!

Greens – YES, grill your greens! That is all…few minutes on the grill, goat cheese, pecans and a vinaigrette. A whole different meaning to deliciousness and simplicity.

With that being said, I hope you experiment with grilling some of these delicious summer goodies. You will surely enjoy it!

Avocado & Strawberry Grilled Cheese

  • 2 slices of bread whole grain
  • 2 slices cheese of choice, sharp cheddar or gouda
  • 4 thin slices avocado
  • 2 strawberries, sliced thin
  • Freshly cracked pepper
  • Olive oil, for grill grates

Pre heat your grill and clean the grates. Oil the grates. Assemble your grilled cheese and place on the grill. Cook each side for 3-4 minutes. Watch closely until cooked golden brown.
