Fall is a time for everything ROASTED! Please enjoy your taters with a char grilled steak or juicy burger. This is the time of year where we still max out our grill knowing it will be shortly hunkered in the back of our sheds and garages for the winter.

Herb Roasted Potatoes

  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/4 pounds red potatoes, quartered
  • 1 small onion, chopped (Lettuce Boy Farms)
  • Cooking spray
  • 2 teaspoons chopped fresh flat-leaf parsley

Preheat oven to 425°. Combine olive oil, thyme, salt, pepper, and potatoes in a medium bowl; toss to coat. Place potatoes on a jelly-roll pan coated with cooking spray. Bake at 425° for 28 minutes, stirring once. Sprinkle with parsley.
