How delicious does a rich and refreshing smoothie sound to start out your morning? I feel as though Monday is my “get back on track” day. What better way to start the week than with a smoothie chock-full of flavor? I am not huge on breakfast, however I know how important it is to eat it. It provides a healthy balance in your diet as well as kicking off your day with tons of energy. You will find when you blend up a smoothie, it will make you a few. So keep it in the fridge and drink it for a few mornings!
This will be a simple and great way to utilize your goods this week in your bins.

Kale Apple Banana Smoothie
Serves: 1 large smoothie or 2 medium ones
Ingredients
- 1 cup greek yogurt (plain or vanilla)
- ½ tablespoon honey
- ¾ cup milk
- 1 tablespoon peanut butter
- 1 heaping cup kale, chopped
- 1 banana, chopped
- 1 medium apple, ¼” dice
- ¼ teaspoon ground cinnamon
- 2 tablespoons granola (optional)
Place every ingredient, except for granola, into a high speed blender and blend until smooth, using a spatula to scrape the sides as you go. Pour into glass and garnish with granola if you so desire.
