Hope everyone had a merry Christmas yesterday. If you are feeling anything like me today, it’s a little overwhelming. I feel like I am coming down from a rush, rush, rush buzz. We are so fortunate to be surrounded by family and friends at this time of year, but now it’s time to settle and get grounded for the upcoming 2017.

One of the places I always turn to to give me a feeling of calmness & renewal is food. It is something I can control and something I can personally choose to make good decisions with.

With that being said, let’s do a nice kale chicken salad. Let’s bring a little crunchy balance to our plates this week.

Kale Chicken Salad

Kale Chicken Salad

for salad:

~ 1 head kale, washed and leaves torn from stem

~ 1/4 red cabbage

~ 2-3 carrots, shredded

~ 1/4 cup of dried cranberries

~ 1/4 cup sunflower seeds

~ 1 rotisserie chicken, pieces shredded

for dressing:

~ 3 tablespoons olive oil

~ 1 tablespoon red wine vinegar

~ 1 tablespoon dijon mustard

~ 1 teaspoon honey

~ 1 teaspoon oregeno

~ salt + pepper to taste

In a pretty salad bowl combine the kale, cabbage, carrots, cranberries, sunflower seeds and chicken. To prepare dressing, grab a small mason jar and combine all the ingredients. Shake until well combined. Drizzle over salad and let marinate for about 10 minutes.
