This salad looks so pretty & simple, right? Well it sure is and that is the goal…utilizing the food that is grown for us and appreciating it for the actual flavors and nutrients they bring to our table. All things good make up this healthy dish.
This would be a great side to a pork dish or your main dish to bring to the office…however you please.
Kale Salad with Apples, Almonds & Raisins
{serves 6-8 for side salad, serves 4 for main dish}
~ 1 head kale, washed, trimmed and massaged
~ 2 apples, chopped
~ 1/4 cup raw almond slices
~ 1/2 cup raisins
Combine all of the above in a salad bowl of your choice.
for the dressing:
~ 6 tablespoons extra virgin olive oil
~ 3 tablespoons lemon juice
~ 1 tablespoon good honey
~ sea salt
~ freshly ground black pepper
Mix everything together in a bowl and whisk together until incorporated.
