The beans are here…the beans are here! You are receiving a half pound bag of organic green beans in your bins this week. These will be a great accompaniment to any grilled or pasta dish. Grilling a burger…beans as your side dish sure sounds delicious to me! Are you thinking salmon…sure, beans will be the perfect sidekick as well. If you are craving a nice lemony pasta dish, cut the al dente beans into quarters and toss with the noodles and some fresh grape tomatoes, top with a little evoo and freshly grated parmesan cheese.

Here is a perfect side dish recipe for beans below. Chow with a nice piece of fish or grilled meat and enjoy.

Lemony Green Beans

  • 1/2 pound green beans, washed & trimmed
  • 2 tablespoons lemon, freshly squeezed
  • 1 clove garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 tablespoons extra virgin olive oil
  • Salt & pepper to taste

Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.

Heat a large heavy skillet over medium heat. Add the oil. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the oil and heated through, about 5 minutes. Add lemon juice and season with salt and pepper. Zest the lemon if you so desire!
