Think SPRING my friends…with this fresh pea hummus recipe. My heart belongs to hummus, it really does. You can essentially take anything and turn it into hummus or a spread of sorts and your friends and family will think you spent hours on it. Once you have made it, spread it on crackers, toast, in wraps or on sandwiches…even burgers! If you want it as the main attraction serve it in the center of some raw or grilled vegetables. Delicious, right?!
Fresh Pea Hummus Recipe
- 1 Tbsp olive oil
- 1/2 cup chopped onion
- 1 clove garlic, chopped
- 2 cups snow peas, washed and trimmed
- 3/4 cup water
- 2 tablespoon tahini
- 2 tablespoons freshly squeezed lemon
- 3 tablespoon chopped fresh mint (spearmint)
- 2 tablespoon greek yogurt
- 1/2 teaspoon black pepper
- Salt to taste
Instructions
Heat the olive oil in a small pot over medium heat. Add the chopped onion and garlic and sauté until soft and translucent, but not browned, about 4-5 minutes. Add the peas and the water, cover and bring to a boil. Let this cook 5 minutes, then drain the peas and onions.
Put the peas, onions and garlic into the bowl of a food processor and add all the remaining ingredients. Pulse until you have a consistency you love. Serve chilled. Grill up some pita bread or veggies and chow down.
