Have you been craving homemade pickles, but don’t have the time to go through the whole canning process? Brace yourself for this easy & quick pickle recipe. For me, cucumbers really scream summer and summer is still here to party for at least 6-8 more weeks. (In my opinion!) Keep that BBQ fired up and those fresh sides at the ready.

Mama’s Quick Pickles

  • 1 cup water
  • 1/3 cup vinegar (apple cider, white, and rice wine are all good)
  • 1/3 cup sugar (optional)
  • 1 to 2 tsp. salt
  • sliced garden cucumbers
  • sliced onion or green onion
  • fresh dill
  • additional vegetables as you like (bell pepper, whole cherry tomatoes, etc.)

In a small bowl or mason jars add the water, vinegar, sugar, and salt. Stir to combine and until the sugar and salt have dissolved. Add the cucumber, onion and dill. Taste and adjust the ingredients to your liking.

All the cucumbers should be covered in the brine, if you have lots of cucumber or are making a big batch, make more brine.

Let the mixture marinate in the refrigerator for a couple hours. If you are able to leave them overnight, you will find the flavors combine and soak right into the cucumber and onion.
