Have you ever added mangos to your guacamole? If not, I highly recommend. It adds a lovely sweet kick to the savory dish. Sometimes I feel we get in a rut with avocados and only feel we can smash it up into guacamole for our tacos, but that is so far from the truth.

Other ideas for avocados

~ substitute for mayo in chicken salad, tuna salad, egg salad or in vegetable dips

~ simply top your toast with it

~ scoop it out into a bowl, add a little salt & pepper and enjoy

~ add to your eggs

Avocados should be incorporated into our daily diets. They contribute a bustling 20 vitamins and minerals making it a “high five” choice to your meal plan. Avocados, due to their mono and polyunsaturated fat content, are a great substitution for foods rich in saturated fat.

Ok, enough nutrition lesson for today…let’s get to the delicious part.

Mango Guacamole

~ 2 avocados

~ 1 mango, chopped

~ 1 small red or white onion, finely minced

~ 1 small jalapeño, finely chopped

~ 1 heaping handful cilantro, washed and chopped

~ 1 lime, freshly squeezed

~ sprinkle of salt

In a bowl, mash avocados until desired texture. Add in the rest of the ingredients mix thoroughly and adjusting flavors to your liking.

Easy enough friends…now enjoy!
