If you are looking to do something new with your cantaloupe besides chunking it up and throwing it in with other fruits, turn it into an appetizer or salad. This is a summer crowd pleaser and so simple it doesn’t seem right…oh and did I mention is looks pretty too?! If you want to turn it into more of a salad, tear up some romaine and drizzle it with a good quality balsamic vinegar. Enjoy!
Melon ~ Prosciutto ~ Mozzarella
1 cantaloupe, rind cut of and cut into slices
1 package fresh mozzarella, torn
1 package prosciutto
Few sprigs fresh basil, torn
Take the sliced melon and wrap a piece of prosciutto around it. Place on the plate. Accompany with mozzarella and basil. Dig in and pass the plate!
