Summer may be over friends, but your bin is still packed with delicous fruits and vegetables still flowing from local farmers! I love the fact that in the bin this week there are yellow peaches…so refreshing to see and easy to just bite into or whip into one of my favorite sides.

In honor of the cold days coming at us in full force and with snow in our forecast this week, lets make a summer seasonal favorite…peach salsa! Pan sear a couple pork chops, roast a chicken or make simple tacos and load it up with light and flavorful peach and apple salsa.

Peach Salsa

Prep time 15 minutes |  Cook time 15 minutes

  • 2 large ripe but firm peaches
  • 1 small apple, peeled, cored, chopped
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped onion
  • 1/2 cup chopped fresh cilantro
  • 3 1/2 tablespoons honey
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
Directions:

Bring medium saucepan of water to boil over high heat. Add peaches; cook 30 seconds. Using slotted spoon, transfer peaches to bowl of cold water. Drain peaches. Peel and chop small. Place peaches in large bowl.

Mix in all remaining ingredients. Cover and chill until needed.
