A perfect side to grilled pork or chicken is a combination of carrots and grape tomatoes with hints of various spices. This simple side will be a crowd pleaser.
Roasted Carrots with Baby Tomatoes
- 1 pound carrots, peeled and washed
- 1 cup grape tomatoes, washed
- 1 cup pearl onions, peeled
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt & pepper to taste
Preheat oven to 500°F with rack in lower third.
Toss carrots & onion with oil, salt, pepper and cumin and spread out in a large 4-sided sheet pan. Roast 20 minutes. Reduce oven to 325°F and add the grape tomatoes and roast, stirring occasionally, until carrots are browned and tender, about 25 minutes more.
