Happy New Year everyone! It is the time of year to get back on track (if you got off) and refocus our lives. Fill your days up with happy hearts and healthy dishes. Commit to more meals with your family…cook together, laugh together and eat together. These past two weeks have been a whirlwind of family gatherings, late nights, full belly’s, and cold commutes. We are in the heart of winter and it is clearly staying around. This is the perfect opportunity to stay inside and get dirty in the kitchen!

This week’s recipe is simple, crunchy and healthy. Make sure you fill up on your greens everyday, whether it be in a smoothie, an omelet or a good old fashion salad. It will keep your vitamin levels up and your steps feeling light. I love grilling full romaine hearts, however I believe all of our grills are still tucked away in our garages for a few more months.

Romaine Hearts with Tomatoes

  • 2 head romaine, washed, dried and chopped
  • 1/2 cup grape tomatoes, halved
  • 1 sliced avocado
  • 1 cup corn
  • 1 cup cooked chicken

Prepare your salad in a lovely bowl or onto a nice plate by combining all the above ingredients.

Goat Cheese Dressing

  • 3 ounces fresh goat cheese
  • 1/4 cup milk
  • 1 tablespoon white wine vinegar
  • Salt & pepper

Combine all ingredients, whisk away to combine together. This dressing will keep up to 2 weeks in your fridge.
