Green beans are upon us —- yeah! These are the types of vegetables that make me think of simplicity and really enjoying the flavors. This recipe will highlight the beans & potatoes without stealing their natural thunder of deliciousness.
Rustic Boiled Potatoes & Green Beans
~ 4-6 potatoes, peeled and boiled
~ 1 tablespoon olive oil
~ 1 stalk celery, chopped finely
~ 2 cloves garlic, chopped
~ 1 pound green beans, ends trimmed
~ 1-2 tablespoons of stone ground dijon mustard
~ salt & pepper to taste
Prepare your potatoes and boil in a pot of water until tender. Drain and set aside. Heat up a cast iron skillet with 1 tablespoon olive oil. Add celery and garlic and saute’ for 2-3 minutes or until soft.
Add in green beans and cook for 2 minutes. Once the beans have been cooking add the boiled potatoes and cook for another 6-8 minutes or until golden brown. Once you veggies are cooked to your liking, stir in the dijon mustard. Season with salt & pepper.
Serve immediately.
