Nothing says “I love you” like vegetables and cheese. Get your broccoli washed and your cheese shredded, it is time to perfectly roast some tasty greens.

Did you know that broccoli is apart of the cabbage family? Broccoli is busting at the seams with numerous nutritional value. Its top leaders are vitamin C and dietary fiber. Coming in right behind it are anti-cancer fighting agents which are very, very important. Needless to say, broccoli is an important and divine vegetable that we all must partake in.

Cheddar-Roasted Broccoli

  • 1 head broccoli – washed and head cut into florets
  • 3/4 cup shredded Farm Country smoked cheddar cheese (or cheese of your liking)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt & cracked pepper to liking
  • 1 tablespoon Sriacha
  • 1 tablespoon lemon (optional)

Preheat oven to 425 degrees.

Prepare the broccoli and cheddar. In a medium size bowl whisk together olive oil, garlic, salt and pepper. Add the broccoli and cheddar to the bowl and toss until evenly distributed. Drizzle with Sriacha.

Place the broccoli mixture into a light oiled baking dish or a cast iron skillet.  Roast for 20-25 minutes or until florets are browned and crunchy. Remove from oven and squeeze fresh lemon juice onto dish.

Feel free to enjoy this dish with a protein, or mix in some pasta or rice…heck, you can even smother it between some Little Rooster’s bread and call it lunch.
