There is something refreshing about a salad mixed with cucumber, tomato and herbs…to me it exudes warm weather, memories and cheer. The bites being crispy and refreshing all the way down to the very last fork full.

I usually save the juices at the bottom to dredge some crusty bread through not wanting to waste a single drop.

Traditional greek salad.

Traditional Greek Salad

Prep Time: 15 minutes

Serves: 4-6 people

  • 4-5 large, ripe, tomatoes, wedged
  • 1 large red onion, thinly slices
  • 1 cucumber, sliced
  • 1/4 pound feta cheese sliced or crumbled
  • 1 tablespoon dried oregano
  • sea salt
  • 1/4 cup top quality extra virgin olive oil
  • 1 lemon, squeezed
  • 1 tablespoon of water
  • 1 dozen olives, kalmata, green, black, etc.
  • pickled pepperoncini hot peppers

In a bowl, combine tomatoes, onion, cucumber, feta, oregano. Fold together. Meanwhile, in a mason jar, mix salt, olive oil, lemon and water. Shake until blended. Toss the olives and hot peppers into the salad bowl. Drizzle with dressing until coated to your liking.

Now pour yourself a glass of chilled white wine and enjoy these “milder” temps.
