I first fell in love with zucchini noodles when a friend loaned me her spiralizer. It was such an easy tool to use and created a whole new meaning for zucchini for me. I must admit, I am not the biggest fan of zucchini, but crunchy noodles with all delicious toppings really was a game changer for the family.
Zucchini Pasta + Tomatoes
1 or 2 zucchini, spiralized
1/2 tablespoon good quality olive oil
2 garlic cloves, minced
1 cup heirloom tomatoes, cut in half
pinch red pepper flakes
salt + freshly ground pepper
1 tablespoon fresh basil, chopped
1/4 cup freshly grated parmesan cheese
Directions:
In a large non-stick pan set over high heat, heat the oil.
Add the garlic and cook until golden, 30 seconds.
Add the tomatoes, and crushed red pepper flakes, and season with salt and pepper. Reduce the heat to low.
Simmer, covered, until the tomatoes soften, 15 minutes.
Increase heat to medium-high, stir in the zucchini and basil, season with salt and cook 2 minutes. Fold in fresh parmesan. Serve right away.
