Oh yeah, you heard me right. It has been a hot, hot summer and this week will continue to be steamy, so I think it is totally appropriate to cool down with this simple, yet totally satisfying sweet treat.

You really only need a few things to get this dish accomplished so let’s get started.

Banana Vanilla Ice Cream with Walnuts & Caramel 

{makes 3 cups}

~ 6 bananas, ripe and peeled

~ Seeds from 2 vanilla beans or 2 teaspoons vanilla extract

~ Caramel sauce (your favorite)

~ 1/4 cup crushed walnuts

Cut bananas into chunks and freeze overnight. Once you are ready to make ice cream, place banana chunks and vanilla in food processor. Don’t be alarmed if the food processor jolts a little bit. It is trying to break down the frozen banana. The mixture will go through a crumbly phase, then a gooey phase and lastly the ultimate creamy phase…blend for about 3-5 minutes or until your desired consistency.

You will want to scrape down the sides of the food processor throughout the blending process to ensure even blending.

Serve right away or put in a freezer safe container.

Top with caramel sauce and walnuts.
