It is clear that winter is staying around for quite a while. This week let’s warm up and make a comfortable dish chuck full of pasta, broccoli, lemon and garlic topping it with freshly grated parmesan cheese. Doesn’t that sound delightful while the temps are still frigid and bitter?

If you have ordered romaine this week, make yourself a lovely side salad to kick off your meal with…and please do not forget to pour yourself a glass of wine (or two) to compliment your dinner. It’s cold outside and you certainly deserve it.

Crunchy Broccoli Salad

Broccoli & Lemon Pasta

  • 1 package pasta of choice
  • 2 tablespoons olive oil
  • 1 head broccoli, washed and chopped
  • 2 cloves garlic
  • 1 lemon, juiced
  • 1 teaspoon red pepper flakes
  • 1/4 cup fresh parmesan cheese
  • Salt & pepper to taste

Cook pasta according to the box. Drain and set aside. In a large skillet heat 2 tablespoons olive oil and add broccoli and garlic. Saute’ for 5-7 minutes or until tender with a slight crunch left.

Add in the cooked pasta and mix well. Add freshly squeezed lemon juice, red pepper flakes and parmesan cheese. Stir well.

Toss into a bowl and season with salt and pepper to liking.
