The bin this week is chuck full of a lot of fruit so let’s put it to good use and spice it up a bit!

If you have some chicken, beef or pork on hand, grill that up and then load it up with this very easy & tasty salsa recipe below! Not in the mood for a taco…then grab a fresh piece of halibut or swordfish. Fire up the grill and cook to desired doneness. Fish, depending on the thickness will take about 12-14 minutes total to cook. Cooking fish to a medium or medium well doneness is the best way to serve fish.

If you want to keep this dish vegetarian, wash up some romaine & kale and serve as a fresh & crunchy salad.

Mango & Tomato Salsa

  • 1 tomato, deseeded & finely diced
  • 1 mango, peeled & finely diced
  • 1 avocado, finely diced
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon finely minced jalapeño
  • 1 tablespoon freshly squeezed orange
  • 1/2 teaspoon sugar
  • 1/2 teaspoon rice vinegar
  • 1 tablespoon cilantro
  • Salt & pepper to taste

Combine tomato, mango, red onion, jalapeño in a bowl. Whisk together the orange, sugar, vinegar, cilantro, salt & pepper into a small bowl. Pour dressing over mixture and mix in. Fold in avocado last and serve whichever way you feel fit.
